Last weekend I decided to try the Pumpkin Smash recipe I found on Emily’s blog. I didn’t have Splenda, so I used 1/2 cup of sugar instead of the 3/4 cup of Splenda.
I think I might have added a teeny bit too much Pumpkin Spice!
It was still very good, just spicy. I have a tendency sometimes when I’m cooking or baking to eyeball the measurements. What can I say? Giada makes it looks so easy! Alas, I am no Giada.
I added some vanilla yogurt to it and made a “pudding” out of it. Tasty, tasty!
Do you measure things exactly when you’re cooking or baking, or do you eyeball things? With cooking I’m a little less hesitant to measure precisely, but I know it’s very important in baking. And when I’m making something for other people or guests, I always measure everything!

I know I’ve posted about this before (the pumpkin shortage), but this article from New York Times just came out yesterday. I’m headed to the grocery today to stock up!! My roommate will think I’m NUTS.
