Inspired by CookinFanatic’s Strata a few weeks ago, I made a mental note to make my own one day. Usually these "mental notes" of mine get lost in my noggin, but I was flipping through my mom’s "Diabetic Living" magazine and saw an enticing recipe for Tomato, Spinach, and Feta Strata. Perfect!
For those of you who aren’t familiar with strata (because I totally wasn’t up until I saw it on Steph’s blog), it’s a casserole that usually consists of bread, eggs, and cheese. In other words….heaven! It’s kind of like quiche in that there are a billion ways you can make it – you can add in meat, or keep it vegetarian and “beef” it up with the veggies. Basically this one consisted of bread, eggs, asparagus, spinach, onions, milk, tomatoes (I used cherry), and feta cheese (on top).

Okay, if you’re a stuffing or a quiche lover like I am, you would LOVE this. But really, can you go wrong with bread, eggs, and cheese? Nah.

I felt awkward for about 0.2 seconds, but the alternative would have made me feel crappy. Phew!
I’m so pumped for this weekend – I’m going to a water park! (Coco Key, in Cincy). I’m tagging along with my sister and her family. I LOVED when we went last summer….seriously – you feel like a kid all over again! Plus, they keep the whole water park at 84 degrees. Heaven, right??
Have you ever been to a water park? If so, did you like it? They were supposed to build a huge water park 2 miles from my house. Then the deal fell through! DamnDarn economy.
