I LOVE quiche – it’s one of my favorite things to eat because it’s SO easy and relatively cheap to make. Plus it’s very easy to make healthy! I decided to try Biz’s Crustless Broccoli Spinach Quiche that I saw on her blog a couple of weeks ago.
Biz, this was wonderful! I omitted the Canadian bacon because I knew I’d have this for lunch on Friday, and I can’t eat meat that day (Lent). I loved the addition of spinach, too. Very tasty – will be making this again!
Nicole from Prevention RD is having a great challenge for the month of April – do something you normally DON’T do. It can be anything health/nutrition/fitness related. I will be the first to admit that I’m bad about stretching – yes, even with all of my injuries! I do yoga twice a week, which certainly helps, but I’m making it a priority to stretch every day in April. Even if it’s just 3 minutes of stretching. Everyone has three minutes, right?! Nicole will post at the end of the month to see how everyone did with their goals. Is anyone else in? Is there something you don’t do that maybe you should?
Well, this is the big week – my sister is scheduled (as of now) to go in on Wednesday to have her baby! Any prayers/happy thoughts towards her way, we’d appreciate. Hopefully by Wednesday afternoon I’ll have a healthy little niece or nephew!
