I haven’t posted a new (to me) recipe in awhile, have I?
I’m pretty much a sucker for crock pot meals. Or any meal that involves black beans. So last week I tried out the Crock Pot Enchilada Recipe that Lee posted a couple weeks ago. I do agree that it’s more of a pie or casserole than enchiladas, but it was tasty nonetheless!

Random Question of the Day:
If you could go back or forward in time, where would you go?
I have ALWAYS loved reading books about the past and love period pieces, so I think it’d be fun to go back to the 1800′s. Maybe find myself a Mr. Darcy:

I think going into the future would be interesting, but I’d probably be intimidated and scared. I mean, the way the future is portrayed (in movies) is always CREEPY and dark.

Sure, it might be an animation and it might be a Disney movie, but it’s still some scary stuff.
(*If you haven’t seen Wall-E, I wouldn’t recommend it, IMO. I’m more of an “Aladdin” and “Toy Story” kinda gal, though).

I don’t like period pieces at all! I feel like Im missing out on some good stuff, but they always bore me.
Glad you enjoyed the enchildadas. I thought they were a little bit too tomatoey.
I think I would have been an awesome flapper back in the day… Short dresses, fringe, scandel? Count me IN.

Oh my goodness, I LOVE Pride and Prejudice. Mr. Darcy had many a fault, but he captured both mine and my younger sister’s hearts when we were preteens.
There’s no way I could survive in the way back when without toilet paper, indoor plumbing, central heat and a/c, deodorant, refrigeration, etc… I lived in a third world country for my teen years and I got a bit of a taste of what living without modern amenities is like and I just don’t think I could go back.
I agree – I didn’t really like WallE that much – Hannah and my favorite Disney movie is The Little Mermaid – holy cow, she didn’t watch a different video for about three years in a row! I was sick of it when she was little, but every once in a while we will play it again and sing along!
Whoa. Those crock pot enchiladas look awesome. Going and book marking! Although Wall e wasn’t a traditional disney movie…I think it had a REALLY important message!
I would love to go back to the 1800′s – life was so incredibly different than our modern world today and I think it’s fascinating how families lived off the land, spent time together without technology, etc! I think it’d be cool to see
